Unlike plants, whose cell walls are composed of cellulose, mushrooms construct their cell walls out of chitin — the same tough, indigestible polysaccharide found in the exoskeletons of crustaceans. Human digestive enzymes (specifically chitinases) are largely inefficient at breaking down raw fungal chitin.
